Why do I have to pay for Latino channels & sports channels?
WHY do I, an English speaking American woman aged 65, have to pay for LATINO channels & sporting channels ???

AT&T U-verse (and DIRECTV and to some extent AT&T TV) is using the traditional pay tv tier model where a package of diverse channels is created for a price. The number of customers in these tiers drives pricing for the various channels and makes the tier more affordable for all the customers in a way pick-and-choose won't.
You can see how the market is pricing "pick-and-choose" in the various and sundry streaming offerings that are popping up: Disney+, ESPN+, Discovery+, CBS All Access/Paramount+, Peacock Premium, Hallmark Movies Now, etc. For the most part, to get everything you want (unless you have very narrow viewing habits), you'll pay more than you would in the tiered model.

Because America is so large and diverse that English is not the sole language of the country. So they cater to another very large portion of the populace. So English packages of TV providers contain some of those channels. And vice versa, Spanish packages include some English channels. Being 65 has no affect on that.

Thanks Juniper for your input. Being 65 does change a lot - raised an avid snow skier and ice skater and swimmer - I now need two knee replacements and really have never enjoyed team sports anyway. I just wish AT&T made an effort to allow us to split off those channels that are costly to provide and those we are not interested in...and since such a large segment of the population is over 60 now and has most of the extra money to spend...I'd like to be able to select more appropriate AT&T programming for myself...spending money on what I like. Others who want those channels can select them and enjoy them. I am strongly opposed to being forced to pay for them as they are bundled with those that I do like. AT&T - how about a senior offering for those with reduced fixed (and declining) incomes...those who may have decreased ability to get out, to drive, to walk...and then there is the COVID exposure...for those, watching TV becomes a more important part of their lives. Why not create offerings such as a SPORTS pkg, and a LATINO pkg, and a SENIOR pkg...etc ? I have had AT&T everything all of my 65 years and now my Uverse 300 cost is up to $101.55 per month ! Disappointed that AT&T cannot do better for long-standing supportive customers like myself and my parents many years before me. Spectrum will not be any better, I guess. And keeping costs down means missing some favorite channels AND buying a new SMART TV.

I'm a 68yo female and I am annoyed that I get all the religious channels, the sports channels, the kiddie channels and those shopping channels.
News flash: HIDE the channels you don't have or want on the guide. Out of sight, out of mind.
*note to @Juniper The reason that being a senior counts is that we think we've EARNED to right to complain!!!

Certainly wasn't suggesting you don't have the right, so am sorry if it came off that way. Just that individual age has no affect on the available channels or how the packages are arranged for DirecTV.
