That can be tricky with a digital output because those hearing aid interfaces often don't support digital inputs. And, if it does have an optical digital input, you'll need to use 2-ch PCM Audio from the HR44, not Dolby Digital 5.1 audio. What does your interface have?
As a follow up. I bought Insignia brand wireless headphones from Best Buy and plugged them into the optical point on the Gemini. They work great. What I though was a 'plug' on the optical port is just a little swinging door that the cable end just pushes aside.

Yes, both the HDMI OUT and Optical Audio OUT provides a digital audio signal. What are you trying to do?

My Gemini has a grey plug in the optical port and I want to hook up some headphones. Do I just need to pry out this plug?

Never heard of optical headphones, maybe adapter to Bluetooth headphones. The optical Jack could have a little door that pushes away for cord.
