Are FireTV 4K Max sticks and the FireTV Cube (Gen 3) reasonable platforms for Stream
I'm just wondering how well the Stream app runs on them? Does the app take a huge amount of storage? Does it crash often? Is the UI hard with the FireTV remote?
It may be finally time for me to jump ship from U-verse TV and I'm exploring this option along with a few others.

Excellent streaming devices. Also consider Roku, Apple TV, and DirecTV's own streaming boxes.

I already have the FireTV devices and they work well for most of the cases I have for them. I would just try another streaming service first before switching hardware at this point.

I don't have a firecube but do have a firestick. I don't seem to have any problems with viewing on my firestick. You can try out the free trial it is for 5 days to see if you have any issues.

I use Fire Sticks and Roku's at home and while traveling in my RV. They both perform similar with little to no trouble.
