If you're not seeing the channels, press menu, then go to options and find the "hide channels" selection and press 860 or 1860 to go to the channel and unhide them.
I believe the only channels exclusive to SD are 864 Showtime Next and 866 Showtime Women. Everything else is HD and SD. Nothing is exclusive to HD.
And yes, it does include On Demand.

Correction:
862 is Showtime Family Zone
864 is Showtime Next
890 is Flix
Those three are only in SD. The others are all in HD and SD.
