One option is to call in and ask for a temporary rate reduction. While this won't reduce your channels, you can reduce your fees. Just be sure to make a note of when the promotions end, as you won't be reminded.
Another option is to hide all the channels you don't watch. Press the menu button, then I think you want to select options and then channel options. I did this with all the channels I'm not subscribed to, plus the SD duplicates (for example, channel 4, 202, 602) as I get those channels in HD. I then did it with the religious and shopping channels.
The downside: If you get a free preview, you'll have to inside the channels.
This is a bit of a rant, but Uverse packages have hardly changed in over a decade other than individual channels coming and going. The product was never sold or offered as a la carte. If that’s something you think you need, look elsewhere.

Very few channels are sold a la carte. The premium movie channels are and some of the foreign-language channels may be.
Other than that, I can't easily think of any.
